Study of Antimicrobial Activity of Lactic Acid Bacteria from Lactobacillus sp. Isolated from Dairy Products

Apstrakt:
Four Lactobacillus strains were isolated from two types Balkan home made yogurt and white brined cheese. These stains were tested for their ability produce antimicrobials agains Gram positive and Gram negative bacteria as Еscherichia coli HB101, Staphilococcus aureus ATCC39592, and Bacillus cereus ATCC 6633. The obtained results indicated that some of the strains produced bacteriocin-like substances.
